— It's a responsibility

I was shocked that the bread came out so well. It was so tasty, so much that I want to make more in the next few days.

I go from being under-enthusiastic to overenthusiastic and back again. Most of the time it’s a chore–I want to keep the yeast healthy so I feed it and try to make bread on a regular schedule…and then other times, I’m so happy I can make such delicious bread.
